Ingredients
1 c. long-grain white rice
1/2 c. slivered almonds (optional)
2 (3") cinnamon sticks, plus more for serving
1 (12-oz.) can evaporated milk or 1 1/2 c. almond milk
2 c. whole milk or almond milk
1 tsp. ground cinnamon, plus more for serving
1 tsp. pure vanilla extract
1/4 tsp. kosher salt
Condensed milk, simple syrup, or agave, for serving

Directions
Step 1: In a fine-mesh strainer, run cold water over rice until water runs mostly clear, about 15 seconds. Transfer rice to a blender. Add almonds (if using), cinnamon sticks, and 3 cups filtered water and blend until rice is broken down but not totally pulverized, about 30 seconds. Transfer to a container with a lid and refrigerate overnight.
Step 2: Return rice mixture to blender and blend until rice and almonds are pulverized, about 60 seconds.
Step 3: In a large bowl, lay cheesecloth in a single layer (do not use 2 layers of cheesecloth). Pour rice milk through fine-mesh strainer into cheesecloth, pressing on pulp with a rubber spatula to release as much liquid as possible. Discard rice and pulp. Gather corners of cloth and work milk through the fibers, massaging to move around ground rice. (If you don't mind a bit of sediment in your drink, this can be done without cheesecloth by pouring mixture directly into strainer.)
Step 4: Add evaporated milk, whole milk, ground cinnamon, vanilla, salt, and 4 cups filtered water and whisk until combined. Taste and add condensed milk 1 teaspoon at a time, whisking after each addition, until sweetened to your liking.
Step 5: Spoon or pour horchata into ice-filled glasses. Garnish with cinnamon sticks and ground cinnamon.

1 tablespoon Sugar
3 Tablespoons Lime Juice
1/3 cup Mint Leaves
36 ounces ginger ale diet or a combo of ginger ale and lemon soda

2 -3 cups ice

Directions
Step 1: In a mortar and pestle, add the blackberries, sugar, lime juice and mint leaves. Crush them together until your have a puree.
Step 2: Divide the mixture among 4 large mojito cups or 6 medium cups, or place it all at the bottom of a large mojito pitcher. Add sprigs of mint and lime slices to the serving cups or pitcher.
Step 4: Fill the pitcher with diet ( or regular) ginger ale , or use a combo of ginger ale, lemon soda and club soda. Add ice to your taste. Finish off the mojitos with fresh blackberries and more lime slices to the drinking cups of pitcher.

6 c. cranberry juice
1 L ginger ale or 7Up, chilled
4 c. pineapple juice
4 c. orange juice
1/4 c. lemon or lime juice
1/2 gal. strawberry sorbet
1 navel orange, sliced
1 c. pineapple chunks or rings
Maraschino cherries
Sliced strawberries

Directions
Step 1: In a large punch bowl, stir together cranberry juice, pineapple juice, orange juice, lemon juice and ginger ale. Add sorbet and garnish with fresh fruit.
Step 2: Serve immediately in chilled glasses.

Ingredients

1 cup ice
1 cup condensed milk
1½ cups heavy cream
½ cups lemon juice (or lemonade juice)
whipped cream, to serve
lemon slices, for garnish

Directions

Step 1: Put the ice, condensed milk, heavy cream and lemon juice into a blender Blend on high speed for 30 seconds
Step 2: Pour into glasses and top with spray whipped cream and add a lemon slice for a garnish

Ingredients
10 large apples, quartered
1 orange, halved
4 cinnamon sticks
1 tsp. whole cloves
1 tsp. whole allspice
1 whole nutmeg
1/2 c. packed brown sugar

Directions
Step 1: In a large stockpot over medium heat, add apples, oranges, spices, and brown sugar. Cover with water by at least 2”. Bring to a boil, then reduce heat and simmer, covered, 2 hours.
Step 2: Remove orange halves, then use a potato masher or wooden spoon to mash apples. Return to a simmer and let simmer uncovered for 1 hour more.
Step 3: Strain through a fine mesh strainer, pressing on solids with a wooden spoon to squeeze all juices out. Discard solids.
Step 4: Serve apple cider warm.

 

Ingredients
4 cups watermelon, chopped
1 1/2 cups lemon juice
1/2 cup sugar
6 cups cold water

Instructions
Step 1: Blend together chopped watermelon and lemon juice in blender until very smooth.
Step 2: Add to large pitcher. Add sugar and cold water and stir well. Pour over ice and enjoy!
